Well , I dont think I would want to be hit with a paintball shot from either one of the two cannons.....Getting hit with one @300 feet per second hurts and leaves a mark.......500 feet per second leaves a hole......I still think I would rather get hit with 1 than 75 though....the lesser of 2 evils.

Your flow rate will already be restricted by your 3/4 " barrel porting so you wont be able to dump the chamber any faster by using 2 valves instead of one assuming they are 1" sprinkler valves.....Probably not worth wasting an extra valve for this setup.....Do this on a larger cannon.

You need to take into account the fact that you will be using threaded fittings so they must also be schedule 160 .The weakest part of the pressurized system will always be at your threaded connections so you must take this into account and cant just design your cannon around pipe working pressures....
