Makes me wonder how much pressure can be achieved using this method??? Was there a limit per the contest rules?

Depends on the concentration and quantity of the chemicals being used, and the size of the chamber in which they are contained.

Only up to a point. Eventually you reach the pressure limit of CO2 in air versus dissolved in the water. Once you reach that limit most of the additional CO2 stays in the water.

A pretty good estimate of the maximum pressure you can obtain with vinegar and bicarb is that it'll reach the same pressure as a bottle of carbonated soda. The pressure in a can of soda depends on the temperature and the amount of CO2 dissolved in the water. Typically values at room temperature are in the 30 to 60 PSIG range.
