The best thing about this is that you got the family involved

Depends on the concentration and quantity of the chemicals being used, and the size of the chamber in which they are contained.

Only up to a point. Eventually you reach the pressure limit of CO2 in air versus dissolved in the water. A pretty good estimate of the maximum pressure you can obtain with vinegar and bicarb is that it'll reach the same pressure as a bottle of carbonated soda. The pressure in a can of soda depends on the temperature and the amount of CO2 dissolved in the water. Typically values at room temperature are in the 30 to 60 PSIG range.
