Ok, well I think I'm going to go with using a air soft pistol grip. How would I mount that without it looking like shit?

buy a cheap springer, 1911's seem to be popular, take the slide/top assembly off, then epoxy the bottom part to the gun. you might need to do a little sanding/cutting to make it fit

why not carve it out of wood, a simple grip isn't too hard. Or use polymorph, thats what the grip on the HEAL by Ragnarok is made of.
