Well, they're multi-piece designs that are literally held together by the bore of the gun. The moment they're clear of the bore they fly apart due to aerodynamic forces. It's also pretty bad ass because at those velocities they're burning just due to the extreme temperatures on the backside of the shock wave. I would be lying if I said I haven't been thinking of ways to pack a 2 stage gun into a rifle-esque design.
As for 2 stage designs, the biggest issue is that the piston in your pump stage will be single use and will extrude itself at least part way down the barrel. Very cool toys, but reloading them.... Well, that depends on the size of the gun. The smallest 2-stage I've seen took about an hour or two to reload. The largest I've seen took as much as a month to reload. That said, if you're making one small enough to be shoulder fired, it would be smaller than the smallest I've previously seen so maybe there's a way to make it work well?
