How big would I need for a 2" porting piston

Cannons powered by pneumatic pressure (compressed gas) using a valve or other release.

All would depend on your definition of smooth. It may be 'very' smooth, but I wouldn't result to such claims as 'perfectly'. Anyway, we were not talking about the interior surface of sch 40 tees, rather sch 40, and 80 pipe. Perhaps you should of read a little better in depth?

If you want the piston to slide "in" the tee fitting I would reccoment Spears Sch 80 tees. The spears fittings in my mind are the best there are. The good thing about them is the mold like is so tiny it is easily sanded out with some 600 grit. Also the interior diameter of the tee is the same as the ID of the pipe.

Now, about your stupid sprinkler valve question. First, sprinkler valves are ugly and they (in the words of Dave Rabbitt) suck infected moose testicles. As for connecting to the valve, you do not use a 2" cap for that; you use the appropriate bushings or you tap threads into the cap/plug.
