Rumor around here is that some drunk plumbers came up with the idea. We'll never know for sure. It's like asking who invented the wheel. You might be able to find out who did the first hybrid, etc... though.

Gunpowder (and the basis of modern explosives) was invented in China during the Han era, roughly around AD142 (thats when the first written records of gunpowder were made, as far as we know). I'd assume it was shortly after they made gunpowder that they figured out to put it in one end of a tube with a projectile in front of it.

There is actually an answer to this.
There was a scientist (I can't remember/find the name) that created a cannon that used methane gas in a cannon to fire various stuff, using a spark to ignite the gas.
Although it wasn't actually firing potatos, it follows the basic principle that spudgunners use and was done in some hundreds of years back.
So we could consider this the first spudgun if we wanted.
I'll search to try and find the name, but I don't hold much hope.

The moon has a dark side and a light side, one side faces us all the time while the other side is always in darkness.
I highly doubt that there was any single inventor of the potato cannon. My guess is that different people everywhere came up with it themselves and it just got spread around, finally gaining popularity, I mean lets face it a potato cannon is not a very sophisticated device (I am referring to the basic ones that were the source for the common cannons today.)
btw, Americans don't invent everything, and its quite arrogant to seriously believe that.
