As far as making a breech loader, your valve choice doesn't really matter. You should probably look around this site for ideas; a ball valve would be much simpler, but would also take away from the accuracy and power of the cannon.
Sprinkler valves seem to be the most popular choice for modding, but that will take some time and effort.

I didn't realize that was a question

Its easy to make a breech loader, hell even a bolt action breech loader, there is almost nothing you can do on a combustion that you can not somehow replicate on a pneumatic.

Breech loading pneumatics are not uncommon. Here's one I made earlier (And by earlier, I mean May 2007) - and a take of it being used for (vaguely) rapid-fire: Rickroll

In that case, the whole barrel is slid forwards in it's supports, loaded, then brought back and locked into place.

The valve is unimportant - although if you're going to the effort of a breech loader, it would be pretty wasteful to then be lazy and put a ball valve on it.

@sputnick: It is very hard to burn your eyebrows off with a pneumatic. Very easy with a combustion, if you're being a total berk that is.

Haha says you, all depends on what ammo you're using

As has been said you can use any kind of valve at all. Whichever you use is irrelevant. All of them can be on a cannon with a breech loading system.

No no no, it has to be spelt berk. Spelling must be correct for slang too.

Either can be used, but yes, berk is the original spelling.
In sputnick's defence, the spelling error was originally mine, but it took me longer to correct than it did for Sputnick to quote.
