disolving epoxy?

Believe it or not, steel is an excellent solvent for the harder epoxies... just a quick application and it brushes right out.
...ahem... I presume you can't use a drill bit.
Which is too bad, because it means that you have to use REALLY nasty solvents... heated fuming sulfuric acid , fuming nitric acid, mixed acids, DMF, NMP... stuff like that.
All of which will destroy your valve stem in one way or another, besides being difficult and/or expensive to acquire.

Have you tried pumping it to high pressure?

@ boilingleadbath: no need for the sarcasim, yes I can use a drill press. I may try that, but I think it has gone into the valve.
@jsr: yes Ive pumped it up to a 100psi and scraped at it with a nail and it leeks slowly.
I'll just give up on it, it was only a bv pneumatic made from scraps

We are talking about the simple little valve stems used to fill the pneumatic cannon, right? If that is the case, just replace the stem.

I was reading the specs on some potting epoxy and it said that acetone destroyed it after ~40 days.

I'm not sure if the valve stem you are having problems with is a schrader or not but,
Auto parts stores sell a 4 way combo tool designed to tighten or loosen the valve core ,, easy out broken cores,,tap the inside threads,, tap the outer threads ..
taking out the epoxied core , chasing the threads to clean up the epoxie ,and putting in a new core and being done with it would be my plan ,your mileage may vary
