With out rifling will the pellet just tumble in midair?

By virtue of its shuttlecock shape and forward centre of gravity, a medium weight airgun pellet doesn't need rifling to be stable.

find yourself a thread in .223 barrel instead of trying to make your own.

Since spudguns work at much lower pressures than 0.223 rifles, I think it's a better (and probably cheaper) idea to look at barrels and projectiles made for either airguns or black powder rifles.
