that would be a sprinkler valve.
it is used to hold the air in the cahamber until you press a button or flip a switch or something and then it releases the air into the barrel, forcing the projectile out. you can even modify these valves for pneumatic actuation which creates a faster opening time, resulting in a much faster speed of the projectile.
