A sprinkler valve is DEFIANTLY better than a ball valve performance wise, and they can hold a decent amount of pressure( i dont know the exact number.)

They've been taken up to 160PSI but I wouldn't recommend it, not because of the sprinkler valve but because of the PVC chamber on the cannon. (If your cannon has PVC pipe or fittings for the chamber).
If it did fail, it'd be the diaphragm, so it's not that dangerous unless you dump unregged CO2 in it.
Most are rated for 120-125PSI.
