I recently bought a 600 psi shock-pump and want to make a high pressure air gun. Check out my schematic, do you think it would work?

Simple and elegant, should operate very reliably. Great idea to have a visible reservoir so the condensation can be seen after firing and the lightweight poly-barrel just makes sense under high pressure. Keep it up!

Unless you'd like to shred your face to pieces and go to the hospital with glass shrapnel in your face, please don't do this. I mean I don't know what kind of glass your using since some are stronger than others but... its glass under pressure, if you drop it or something you basically have a high pressurized glass bomb.

Never use glass bottles as pressure vessels!
Not even Champagne bottles!

If you would like more power, first switch to a better valve, such as a piston valve or QEV.
You won't need 600 psi to make a powerful launcher but you could go that high with suitable materials...not with PVC and certainly not with a glass bottle!
